Cooking with Leah: Meatloaf for Dinner!

Okay, okay! Here’s my meatloaf and mashed cauliflower recipes! I had no idea when I started sharing food that you’d be so interested. So thank you for that! I love to eat and I love trying new things. I have also placed my full cooking video on IGTV and YouTube!  This meatloaf is my regular meatloaf that I normally make, however, the mashed cauliflower was a new addition for me!

I previously came across a recipe similar to this, however, you know I added a couple of things to make it my own. I always have to! Below I’m listing enough ingredients for 2-4 people depending on how much you eat (it works for 4 if the 4th person only eats crumbs to be honest lol). 

First thing is first, set your oven to 350f and then gather all of your ingredients. Don’t forget, you’ll want a pan ready for the meatloaf. I have a bread pan just for meatloaf, so it’s a perfect loaf. I always spray mine with a non-stick cooking spray, if you have an alternative, this is when you use it. 

Next grab a big mixing bowl. Dump in the full box of Stove Top stuffing, the meat, the eggs, ketchup and water. Then you will dig in with your freshly washed hands and mix it up really well. Make sure it’s a moist ball of beef and ingredients. If you need to add a smidgen extra of water or ketchup go for it, but do not go wild with the ketchup. Once you have this mixed together well, place it in your already greased baking pan / dish. Form it into a loaf or however you like to form your meatloafs. Like I mentioned, I stay traditional with my bread pan. Get your Cabot  cheddar and slice it right up, you may need less / more depending how you form the meatloaf. I used exactly the amount mentioned below. After your cheese is sliced, place it on top of the loaf and then squirt ketchup all over the cheese and loaf, this is where you can have a little fun. LOL You’ll want to bake this for 45-60 mins depending on your oven and such. I baked mine for almost an hour. 

While the meatloaf is baking you can get your cauliflower cut up. You’ll want to boil this until it’s tender enough to easily get a fork through it, just like potatoes. This will take about 25 mins, so plan that with your loaf timer. Once it’s tender enough to be forked, drain it and then place it in a mixing bowl. You’ll want to add your butter and start mashing it. I used a hand masher and then finished with a hand mixer. Once it’s mashed to your preference, add the sour cream, salt & pepper. My consistency did not come out the same as potatoes, I’ve heard there are ways to change this. I’ll experiment next time! My coworker mentioned that she does a mix of cauliflower AND potatoes, which sounds super delicious to me. 

During this time you will also need to husk your corn and get the water boiling. I always let my corn boil for 10mins. Don’t forget, you place the corn in AFTER the water is boiling.

Meatloaf
1lb fresh ground beef 
1 box of savory herb Stove Top stuffing 
2 eggs
1/2 cup ketchup 
1/2 cup water
1/2 a small brick of cheddar (CABOT ONLY) 
Mashed Cauliflower 
1 decent head of cauliflower (if you’re feeding more than 2, get 2)
2 tablespoons of butter
1 – 2 tablespoons of sour cream
salt & pepper
Corn on the Cob
I’m sure you know how many cobs to make, lol, but we make 2 per person. I also recommend getting them from a local farmstand while you can! It’s usually much fresher than the grocery store. UNLESS, your local grocery store partners with local farmstands.
